Palm Sugar is made by extracting sap from a palm tree by making cuts in the bark. That sap is then boiled to remove water and the remaining mass solidifies. The taste of pure palm sugar is reminiscent of brown sugar. In the kitchen it has a very low melting point, burning at an extremely high temperature, which makes it suitable for baking.
